Catching Up and Sloppy Joes

Sorry I’ve been absent!  Feel like I’ve had a lot of distractions lately and haven’t had a chance to sit down and blog.

Wednesday, I took the first of three classes to learn the embroidery on my new sewing machine.   It was fun and I was kind of glad I hadn’t messed around with the machine.  I learned a lot!  In class I did this:

Thursday, I taught a beginning quilting class to 3 mom’s and their daughters.  It went really well and they all did a great job!  We went a bit long but by the time everyone left they had: pieced the top, quilted the “sandwich, and sewed their binding to their quilt.   They only had to blind stitch the binding to the back of the quilt at home.

I had set up a table of an assortment of 3 1/2″ squares and backings, so each person got to design their own unique doll quilt.  It was really neat to see the different designs they each came up with!  I have another class this Friday with three 12-year-old girls.  I think it will be a lot of fun!

Today I spent time trying to get organized and get things cleaned up in my work area.  I wanted to get some sewing done but with the mess I had going on, I didn’t know where to start!

I did get this baby quilt all pinned and ready to quilt but I’m not sure what kind of quilting design I ought to do.  Stipple all over in brown?  Circles around the circle-y border and zig zagged along my zig zags?  I’d love to hear your thoughts on this – Please leave a comment!

Well, that’s all I have for now.  I will try to be more consistent with my posting!  I still have some Japanese quilt blocks I’m typing instructions up for and some recipes coming.  I’ve also been finishing up a couple of quilt patterns to post.  Check back soon!  I’m plugging along!

I’ll leave you with my recipe for Homemade Sloppy Joes which we had for dinner.  They are really yummy and everyone loves them.  Hope you enjoy!

Homemade Sloppy Joes

Serves 6
Prep time 20 minutes
Cook time 15 minutes

These delicious, homemade sloppy joes are quick, easy, and kid friendly.

Ingredients

  • 1 1/2lb ground beef
  • 1/2 medium bell pepper (diced)
  • 1/2 medium onion (diced)
  • 1/4 cup brown sugar
  • 1 tablespoon steak seasoning
  • 1 tablespoon vinegar
  • 1 tablespoon Worcestershire
  • 1/4 teaspoon dried mustard
  • 1/2 can tomato paste
  • 1 1/2 cup tomato sauce

Directions

Step 1
Brown ground beef and drain grease.
Step 2
Add bell pepper, onion, brown sugar, and steak seasoning. Cook until vegetables are tender, about 5 minutes.
Step 3
Stir in vinegar, Worcestershire, mustard, tomato paste, and tomato sauce. Mix well and bring to a simmer. Serve on buns.

 

Tomato Pie

I like quiche ok but I really love this Tomato Pie.  I’ve been making it for 15 years and I still get excited when it comes out of the oven.  The tomatoes are cooked until all the moisture is gone and they have a rich kind-of sun-dried taste.  You can use Swiss or cheddar, whatever you have on hand, and it turns out just as delicious.  Sorry I don’t have a final picture!

Just a note: my kids hate it!  Plan something else for them!  You will love it!

Tomato Pie

Serves 6-8
Prep time 30 minutes
Cook time 1 hour
Total time 1 hours, 30 minutes

Tomato quiche, tomato pie

Ingredients

  • 1 Pie Crust
  • 2-3 large tomatoes (chopped)
  • 1 medium onion (finely chopped)
  • 2 tablespoons butter
  • 1/8 teaspoon thyme
  • 1 teaspoon salt
  • 3 large eggs
  • 1 cup milk
  • 1 cup Swiss cheese
  • 1/2 cup Cheddar cheese

Note

For a change, substitute 1-1/2 cups cheddar for the Swiss and Parmesan.

Directions

Step 1
Prepare crust in pie plate and preheat oven to 350.
Step 2
Add tomatos, butter, and onions to pan. Cover and cook over medium heat for 5 minutes. Remove lid and continue cooking, stirring occasionally, until all the moisture is gone.
Step 3
Mix eggs, milk, and thyme. Whisk together. Stir in cheese and salt. Add tomato mixture.
Step 4
Pour into pie crust and bake for 40-50 minutes until knife comes out clean. Cool 15-20 minutes so it can firm up a bit for serving.
