King Ranch Chicken …. SOUP!

Can you be addicted to soup?  I think I may be now.  This soup is so crazy incredibly good.  I taste tested it.  Then I needed some more.  Then I had to have some for dinner and so did everyone else.  Now it’s gone and I’m sad.

I wasn’t going to do another food post until next week, but I really had to share this with you.  I hope you enjoy it.  I think I need to make some more.  A lot more.  Maybe freeze some. :)

King Ranch Chicken .... SOUP!

Ingredients
  • 3 tbsp. butter
  • 3 tbsp. oil
  • 1 cup onion, chopped
  • ½ cup mushrooms, chopped
  • ½ cup bell pepper, chopped
  • 1 tsp. salt
  • 1 tsp. black pepper
  • ½ tsp. cayenne pepper
  • 2 Hatch or Anaheim chiles
  • 4-5 boneless chicken breasts
  • 4 tbsp. all-purpose flour
  • 6 cups chicken stock
  • 28 oz. can diced tomatoes
  • 4 cups milk
  • grated cheddar cheese
  • tortilla chips, if desired
  • sour cream, if desired
Instructions
  1. First, bake skinless, boneless chicken until done. Chop into bite sized pieces.
  2. Next, heat oil and butter over medium high heat. Add onions, mushrooms, and peppers and cooking, stirring occasionally, until tender.
  3. Meanwhile, put your Anaheim or Hatch chiles on a sheet under the broiler until skin begins to brown and blister. Turn and remove when second side is has also browned and blistered. When cool enough to handle, cut off top and stem. Peel off skin and open pepper and then gently scrape seeds from inside. Chop and add to the other vegetables. (Now you never have to buy those canned chopped green chiles!)
  4. Stir in flour and spices and then chicken broth, chicken and diced tomatoes. Bring to a boil and the reduce heat and simmer 20 minutes. Stir in 4 cups of milk and cook 5 minutes more. Adjust seasoning to taste. We like extra cayenne. :)
  5. Serve topped with cheddar cheese, crushed tortilla chips, and sour cream if desired.

  1. I’ve not had it as soup but I do like King Ranch Chicken casserole. I use Beyond Meat vegan “chicken”. Good stuff!
