Tom’s T-Shirt Quilt

This year for Christmas I made Tom a t-shirt quilt.  I had wanted to try one for some time and had saved up t-shirts, so I decided to give it a go.  It’s kind of a scrapbook as each t-shirt represents times in his life – people, places, special memories.  I used Kona cotton for the t-shirt borders, a 100% cotton Air Force print for the sides and back, fusible interfacing, Warm and Natural cotton batting, and, I have to admit, I cheated and used pre-made binding.  I used cotton thread to do a meandering quilt pattern over everything but the t-shirts – which I left alone.

I had different size pieces, so I laid them all out and adjusted the borders so they would all fit together.  I think it turned out great and he was very surprised.

Zucchini Chocolate Chip Muffins

One of our new favorite breakfast foods are my Zucchini Chocolate Chip Muffins.  I’ve modified them to reduce the carbs for Andrew, our newly diagnosed type 1 diabetic,  by substituting Splenda for part of the sugar.  If you prefer, replace the Splenda with an equal amount of sugar.  You can also replace the skim milk with whole milk or the milk and lemon juice with an equal amount of buttermilk.  Whatever you have on hand!

Zucchini Chocolate Chip Muffins

Serves 12
Prep time 10 minutes
Cook time 18 minutes

Yummy, zucchini chocolate chip muffins with carbohydrate listing for diabetics.

Ingredients

  • 1 1/2 cup Flour
  • 1/4 cup Sugar
  • 1/2 cup Splenda (or substitute equal amount of sugar)
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup vegetable oil
  • 1/4 cup milk, skim
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • 1 cup zucchini
  • 1/3 cup chocolate chips

Note

This is a really yummy moist muffin.  I make them with Splenda substituted for part of the sugar to reduce the carb count for my son, who is a Type 1 Diabetic.  If you prefer to use all sugar, substitute and equal amount of sugar.  23.75 carbs per muffin.

Directions

Step 1
Preheat oven to 350. Prepare muffin pan with muffin papers and set aside.
Step 2
Mix flour, baking soda, cinnamon, and salt. Set aside.
Step 3
Add sugar, splenda, egg, oil, milk, lemon juice, and vanilla to a large bowl. Whisk until blended. Add dry ingredients and whisk until just mixed. Fold in zucchini and chocolate chips.
Step 4
Divide batter evenly into 12 muffin papers. Bake at 350 for 18-22 minutes.

Making Progress!

Hello!

Well, I have been keeping busy and thought I’d do a quick post.  I have my Etsy shop up and running with some items I had finished and I can’t wait to finish and add the projects I am currently working on!

I also added the recipes for our yummy dinner last night.  Tonight we had a variation on Paula Deen’s wonderful Chicken Georgia.  Instead of mozzarella cheese, I used pepper jack and served the leftover dirty rice with it.  It turned out great.

Tomorrow we are hanging around the house as Tom has to do some work (he is in IT) and we also have the cable guy coming out sometime between 8 and 12.  I plan on getting busy on my Japanese Quilt Block tutorial.  I really am not into Asian things, though my kids sure are with Pokemon, etc.  However, the blocks in this book are really lovely and I think my quilt will end up looking really unique and special.

Anyway – it’s late and I need to wrap things up for the day!

Spicy Cajun Baked Tilapia and Dirty Rice

Yesterday for dinner I made Spicy Cajun Baked Tilapia with Homemade Tartar Sauce and Dirty Rice.  Dinner was SO good!  So, as promised, here’s how to make them!  And I apologize in advance if you are a purist.  I do not use chicken livers in my Dirty Rice.  Liver is just not my thing!

Spicy Cajun Baked Tilapia

Serves 4-6
Prep time 15 minutes
Cook time 15 minutes

This is a great recipe for Spicy Breaded Cajun Oven Fried Baked Tilapia

Ingredients

  • 4-6 medium tilapia filets
  • 1/4 cup flour
  • 2 large eggs
  • 3 tablespoons milk
  • 1/4 cup cornmeal
  • 3/4 cups breadcrumbs
  • 1-2 tablespoon Cajun Seasoning
  • 4 tablespoons butter (melted)

Directions

Step 1
Preheat oven to 400. Put flour in one bowl, whisk eggs and milk in second bowl, and mix breadcrumbs with cornmeal and spice mix in a 3rd container.

Coat fish lightly in the flour, dip in the egg mix, and then coat well with the bread crumb mixture. Place coated filets on a baking sheet. Melt butter and drizzle over the fish and then bake for 10-14 minutes until fish is flaky.

Serves 4-6 depending on their appetites!

Cajun Seasoning Mix

Ingredients

  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 1 1/2 tablespoon salt
  • 1 tablespoon pepper
  • 1 tablespoon paprika
  • 1 tablespoon cayenne pepper
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1/8 teaspoon thyme

Note

I use this for dirty rice, fish, chicken - anything that needs spicing up!

Directions

Step 1
Mix all together and store in an airtight container.

Homemade Tartar Sauce

Ingredients

  • 2 cups mayonnaise
  • 1 tablespoon pickle juice
  • 1 tablespoon lemon juice
  • 1 medium dill pickle spear (finely chopped)
  • 2 teaspoons onion powder
  • 1 teaspoon salt
  • 1 teaspoon pepper

Directions

Step 1
Mix together well. Chill until ready to serve. You can use it right away but it's better if everything blends together for a bit!

Dirty Rice

Serves 8-10

Ingredients

  • 1 1/2 pounds sausage (any kind you like!)
  • 1 cup onion (chopped)
  • 1/2 cup bell pepper (chopped)
  • 1/2 cup celery (chopped)
  • 2 cloves garlic (minced)
  • 2-4 tablespoons Cajun Seasoning (to taste)
  • 1 cup chicken broth
  • 1 medium bay leaf
  • 4 cups brown rice (cooked)

Note

If you want a more traditional dirty rice, reduce the amount of sausage and add equivalent of chicken livers.  Use white rice. Stir in fresh parsley before serving.

 

Directions

Step 1
In a large sauce pan, cook sausage, crumbling, until browned. Drain grease. Add cajun seasoning, onion, bell pepper, and celery and cook for 5 minutes. Add garlic and cook 1 more minute. Add stock and scrape pan bottom to loosen any brown bits. Bring to a boil, reduce heat and add bay leaf and rice. Simmer 5 minutes.

Getting Started

It’s been a while since I worked on a website and I must say, WordPress sure made it nice and easy to get my site, blog, and store all set!  Now to add some content to my pages and products to my site!  Hang in there!  I will be hosting a fabric giveaway next week so be sure to check back!

Let me introduce myself!  I am Krista.  I’m a wife and the homeschooling mom of two boys, ages 12 and 10.  I love hanging out with my guys as well as to cook, sew, quilt, make jelly, and crochet and have also dabbled in knitting, card making, and mosaics.

We recently relocated from Texas to Missouri and are getting all settled in after some bumps in the road!  The biggest bump was my oldest son being diagnosed with Type 1 (Juvenile) Diabetes on January 3rd.  So we started the year with a big scare and a week in the hospital.  There is no history of it in our family, so it was a big surprise.  Fortunately, Andrew is a trouper and very mature and has handled things wonderfully.

So after a lot of crazy, I’m getting back into the swing of things and my husband, Tom, helped me get this site going!  I hope you enjoy!
